I had to dedicate a recipe to this beautiful ‘Romanesco broccoli’. Its taste between classic broccoli and cauliflower makes it perfect to match with cheeses. I decided to make little soufflés with this somewhat special cabbage, potatoes, egg whites, camembert and Parmesan. I laid them on a base of Camargue red rice, next to thinly sliced champignons sautéd with garlic and rosemary. Our Brusseleir was an excellent companion for the strong camembert and mushroom flavors — a perfect pairing for the end of the winter!
